Venison pairs perfectly with all manner of ingredients, from wine and fruit to berries and red cabbage. But how about coffee? Hunter and chef Jonas Baumg\u00e4rtner shows that this combination gives venison a special kick. It pairs wonderfully with potatoes, saut\u00e9ed honeydew melon and apple chutney.<\/span><\/span>\u00a0<\/span><\/strong><\/p>\n<\/div><\/div>

If there\u2019s game on the dining table, it\u2019s usually venison haunch. The classic way to serve it is with red cabbage and potato dumplings. \u201cThat\u2019s a little outdated,\u201d says hunter and chef Jonas Baumg\u00e4rtner, who runs two restaurants under the name\u00a0<\/span>“der wilde Wirt”<\/a>\u00a0in Ulm and\u00a0Markbronn. Instead, Jonas adds a touch of exoticism to venison haunch, serving it with coffee, melon and chutney.\u00a0<\/span>\u00a0<\/span><\/p>\n

Tip: An entire haunch of venison will usually feed six people. If you\u2019re only cooking for two or three, you can break down the haunch (i.e.\u202fcut it into smaller pieces), using only what you need. It\u2019s a great way to portion the meat and freeze it if needed.\u00a0<\/span>\u00a0<\/span><\/p>\n
