He comes from a family with deep culinary roots in the Bavarian Forest. A chef, a cattle breeder, an author and a regional pioneer, Maurer is known in gourmet circles as the \u2018Meat Pope\u2019, both in Germany and beyond. More than anything else, however, he\u2019s an exceptionally personable, down-to-earth guy.<\/p>\n<p>He impressed Hamburg\u2019s premier food-snob Tim M\u00e4lzer on his own cooking show and now has his name on the cover of a total of six multi-award-winning cook books. Whether it\u2019s a perfect steak, BBQ, forest fruits or fine dining, only high-quality produce sourced as locally as possible makes it through the doors of STOI, Maurer\u2019s training and events kitchen in Rattenberg, a small town in the Bavarian Forest.<\/p>\n<\/div><\/div><div class=\"w-image us_custom_54e7f678 align_center\"><div class=\"w-image-h\"><img decoding=\"async\" width=\"533\" height=\"800\" src=\"https:\/\/www.heroes-world.de\/wp-content\/uploads\/2022\/07\/22-03_LuckiMaurer-c_\u00a9HMe-0700-Kopie.jpg\" class=\"attachment-full size-full\" alt=\"Lucki Maurer l\u00e4chelt in die Kamera\" loading=\"lazy\" srcset=\"https:\/\/www.heroes-world.de\/wp-content\/uploads\/2022\/07\/22-03_LuckiMaurer-c_\u00a9HMe-0700-Kopie.jpg 533w, https:\/\/www.heroes-world.de\/wp-content\/uploads\/2022\/07\/22-03_LuckiMaurer-c_\u00a9HMe-0700-Kopie-200x300.jpg 200w\" sizes=\"auto, (max-width: 533px) 100vw, 533px\" \/><\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><p>But what about the name: STOI? That was the brainchild of his wife, Steffi, when they were renovating the over 300-year-old farmhouse back in 2014. Although, as he says, he had long since given up on his dream of owning his own restaurant, they managed to turn the old cattle stall into a cooking school, restaurant and Wagyu workshop.<\/p>\n<p>\u2018MeatingPoint\u2019 was Lucki\u2019s original idea for the name, reflecting his plans for a venue where meat connoisseurs would come together. STOI, however, won hands-down \u2013 though it might take some explaining to those hailing from outside Bavaria. As Maurer enjoys telling his guests, \u201c<em>Stoi<\/em>, the Bavarian word for a cattle stall, almost sounds Japanese. It could be an international fine dining restaurant in Sydney, Tokyo or San Francisco!\u201d Today, he invites some of the country\u2019s foremost chefs to this very cattle stall. Roland Trettl, Harald Wohlfahrt, Thomas B\u00fchner, Tim M\u00e4lzer and many more have cooked here. Maurer, meanwhile, has been scaling the culinary Mount Olympus, having been named Top Newcomer and taking 27th place in the 100 Best Chefs in Germany.<\/p>\n<p>At STOI, Lucki Maurer serves up a menu fit for legendary heroes: tartare, ox and horseradish, and plank salmon to finish. Let\u2019s begin with the tartare, which Maurer calls \u201cthe perfect way to start\u201d. Dice two shallots. Combine 3 tbsp mustard with 4 tbsp mayonnaise and season with salt, sugar and black pepper.<\/p>\n<p>Feed the meat through the grinder, season with salt, sugar and a little pepper, and add around 80-90g of minced meat per portion into a circular mold. Remove the mold and dress with some of the mustard-mayonnaise cream and the ketchup with capers, shallots and chicory. To finish, place the raw egg yolk in the center of the tartare and garnish with a sprig of chervil.<\/p>\n<\/div><\/div><\/div><\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><p>The second course, ox and horseradish, is a dish Lucki created in homage to the Hotel Waldschl\u00f6\u00dfl and his father\u2019s cooking. It is a recipe from his childhood that he has now immortalized in his book <em>Fleisch-Codex<\/em> (Meat Codex), in a chapter entitled \u2018Classics\u2019. It consists of a silverside rump cut with boiled potatoes, kohlrabi and freshly grated horseradish. As it happens, ox and horseradish is one of the recipes Lucki and his team have turned into a delicious preserve, available in jars from the <a href=\"https:\/\/www.ludwigmaurer.com\/stoi-shop\/\">STOI shop<\/a>.<\/p>\n<\/div><\/div><div class=\"w-image us_custom_54e7f678 align_none\"><div class=\"w-image-h\"><img decoding=\"async\" width=\"800\" height=\"533\" src=\"https:\/\/www.heroes-world.de\/wp-content\/uploads\/2022\/07\/OchsKren-7200258b.jpg\" class=\"attachment-full size-full\" alt=\"\" loading=\"lazy\" srcset=\"https:\/\/www.heroes-world.de\/wp-content\/uploads\/2022\/07\/OchsKren-7200258b.jpg 800w, https:\/\/www.heroes-world.de\/wp-content\/uploads\/2022\/07\/OchsKren-7200258b-300x200.jpg 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/div><\/div><div class=\"w-tabs us_custom_d3db4b93 style_default switch_click accordion has_scrolling\" style=\"--sections-title-size:inherit\"><div class=\"w-tabs-sections titles-align_none icon_chevron cpos_right\"><div class=\"w-tabs-section\" id=\"o468\"><button class=\"w-tabs-section-header\" aria-controls=\"content-o468\" aria-expanded=\"false\"><div class=\"w-tabs-section-title\">Ingredients for ox and horseradish<\/div><div class=\"w-tabs-section-control\"><\/div><\/button><div  class=\"w-tabs-section-content\" id=\"content-o468\"><div class=\"w-tabs-section-content-h i-cf\"><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><ul>\n<li>800g raw silverside of ox<\/li>\n<li>200g root vegetables (carrots, leeks, celery, onions)<\/li>\n<li>4 bay leaves<\/li>\n<li>500g cream<\/li>\n<li>50g horseradish sauce<\/li>\n<li>Starch or kneaded butter<\/li>\n<li>Sugar<\/li>\n<li>Salt<\/li>\n<li>White Pepper<\/li>\n<li>300g kohlrabi<\/li>\n<li>20g butter<\/li>\n<li>Sugar<\/li>\n<li>Salt<\/li>\n<li>600g potatoes (ideally a floury variety)<\/li>\n<li>50g fresh horseradish<\/li>\n<\/ul>\n<\/div><\/div><\/div><\/div><\/div><\/div><\/div><div class=\"w-message color_blue\"><div class=\"w-message-body\"><p>Prepare the meat, season with salt and sugar, and sear in a saucepan with the fatty side down. Add 1.5 liters of water and gently bring to the boil. Add the finely chopped root vegetables and bay leaves and leave to simmer for around 2 hours. When the meat is tender, remove it and cut into thin slices.<\/p>\n<p>Strain the resulting broth and combine with the cream and horseradish sauce. Season with salt, sugar and white pepper. If you like, you can thicken the sauce with a little starch or kneaded butter. Keep the sliced beef warm in the finished sauce.<\/p>\n<p>Peel the kohlrabi and cut into thin slices. Season with salt and sugar and leave it to marinate for about 10 minutes. Glaze with butter and add the kohlrabi greens in thin strips. Peel the potatoes and cook until soft in salted water. Quite soft, in fact, so that they break apart a little in the sauce. To serve, make sure to add plenty of sauce and freshly grated horseradish.<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><p>Last but by no means least is the crowning glory: the third course. \u201cOne of our classic BBQ dishes, especially ideal in summer,\u201d says Lucki. Plank salmon with caipirinha \u2013 but instead of drinking a cocktail with our fish, the ingredients for the caipirinha are packed into the marinade! And, when it comes to fish, Lucki says he still wants to know where the animal comes from, how it lived its life, how it was caught, and how it has been processed. Over the years, he has developed his own style of cooking following the nose-to-tail principle, incorporating lots of Japanese influences and sometimes relying on the maxim \u2018less is more\u2019.
